2 cloves garlic
1 med. onion, chopped
1 Tbsp. olive oil
4 c. chicken broth
2 c. cooked, cut-up chicken
1 bunch cilantro
1 1/2 c. frozen (or canned) corn, thawed and drained
1 can black beans, rinsed & drained
1-2 can recipe cut diced tomatoes (I only used one.)
1/8 c. taco seasoning (1 pkg.)
jack or cheddar cheese, shredded
1. Heat oil in large pot. Saute garlic and onions in oil until soft.
2. Add broth, tomatoes, corn, beans, taco seasoning and chicken.
3. Simmer at a med. heat for around 20-30 min. Add cilantro and simmer a few more minutes.
4. Serve garnished with crushed tortilla chips, cheese and cilantro.
