Also similar to the "boiled dressing" recipe in Irma Rombauer's seminal "Joy of Cooking" in the Depression. And you figured out that you have to raise the temperature to get it to thicken, the trick is how hot and how fast and stirring all the way. Apparently, the more you practice, the easier it gets, we just don't do enough cooking that starts with a pound of bacon these days!
